Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • Salt and pepper to taste

Fillings

  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (red or green)
  • 1 cup cooked sausage or bacon

Wraps

  • 4 large flour tortillas

Instructions

  1. Prep Ingredients: Chop the bell peppers into small dice and cook the sausage or bacon thoroughly if using raw meat. Set aside once cooked.
  2. Cook Eggs: In a skillet over medium heat, whisk the eggs with salt and pepper continuously until they become fluffy and fully cooked, which should take about 3-4 minutes.
  3. Combine Fillings: Stir in the cooked sausage or bacon and diced bell peppers into the scrambled eggs. Heat the mixture together until everything is warmed through evenly.
  4. Assemble Burritos: Lay each flour tortilla flat on a clean surface. Spoon approximately 1/4 cup of the egg and filling mixture into the center of each tortilla, then sprinkle with shredded cheddar cheese evenly.
  5. Wrap Burritos: Fold the sides of each tortilla over the filling and then roll tightly from the bottom up to form a burrito. Wrap each burrito tightly with foil or parchment paper to hold its shape.
  6. Freeze Burritos: Arrange the wrapped burritos in a single layer on a tray or plate and place them in the freezer for 1-2 hours until solid. Once frozen, transfer the burritos into a ziplock bag for longer storage.

Notes

  • Feel free to substitute the sausage with bacon or another cooked breakfast meat for variety.
  • You can add extra veggies like onions or spinach to boost nutritional value.
  • For reheating, unwrap the burrito and microwave on high for 1-2 minutes or until heated through.
  • These burritos can be stored in the freezer for up to 3 months.
  • Use large flour tortillas to ensure easy wrapping and enough room for fillings.
