Flavor Base:

  • 1 tbsp curry paste (red, green, or yellow)
  • 2 cloves garlic, minced

  • 2 tbsp tahini
  • 3 tbsp soy sauce
  • 3 tbsp hot oil (chili oil or neutral oil)

Soup:

  • 150 g noodles (cellophane, ramen, udon, or soba)
  • 2 heads bok choy, halved or chopped
  • 810 gyoza dumplings, fresh or frozen
  • Reserved noodle cooking water

Optional Toppings:

  • 30 g scallions, thinly sliced
  • 1 tbsp sesame seeds (15 g)
  • 1 tbsp chili oil or chili crisp (15 ml)
  • Lime wedges
  • Seaweed sheets (nori)

Instructions

  1. Prepare the Flavor Base: In a large heatproof bowl, combine curry paste, minced garlic, grated ginger, finely chopped parsley, tahini, and soy sauce. Heat the hot oil in a small pan until it shimmers and carefully pour it over the mixture. Stir thoroughly until the mixture is smooth and aromatic.
  2. Cook the Noodles and Bok Choy: Bring a large pot of water to a boil and cook the noodles according to the package instructions. In the last 2 minutes of cooking, add the bok choy to blanch it. Use tongs or a slotted spoon to remove the noodles and bok choy from the pot, reserving the cooking water for the broth.
  3. Cook the Gyoza: In the same boiling water or a separate pot, cook the gyoza dumplings for 5 to 7 minutes, or follow the package directions until fully cooked. Drain and set aside.
  4. Assemble the Soup: Gradually whisk the reserved noodle cooking water into the prepared flavor base to create a rich, flavorful broth. Taste and adjust seasoning if necessary by adding salt or chili flakes.
  5. Garnish and Serve: Divide the cooked noodles, bok choy, and gyoza evenly among serving bowls. Pour the hot broth over them. Garnish with thinly sliced scallions, sesame seeds, and a drizzle of chili oil or chili crisp. Serve immediately with lime wedges and nori sheets if desired for added flavor and texture.

Notes

  • Feel free to use any type of noodles you prefer such as ramen, udon, soba, or cellophane noodles.
  • The curry paste can be adjusted to taste for spiciness and flavor preference—red is generally spicier, while yellow is milder.
  • The soup can be made gluten-free if you use gluten-free soy sauce and noodles.
  • Frozen gyoza can be used directly without thawing but may require a slightly longer cooking time.
