Ingredients

Scale

Soup Base

  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 1 pound ground beef (80/20)
  • 5 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth (plus more for desired consistency)
  • 2 teaspoons kosher salt, divided (or more to taste)

Pasta

  • 12 lasagna noodles, uncooked and broken into 2-inch pieces

Dairy

  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese, freshly grated
  • ½ cup ricotta cheese

Garnish

  • 6 tablespoons fresh basil, finely chopped

Instructions

  1. Sauté the aromatics and beef: Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until soft and translucent. Add the ground beef and sauté until browned all over. Then, stir in the minced garlic, red pepper flakes, 1 teaspoon of kosher salt, dried oregano, and tomato paste, cooking for another minute to combine flavors.
  2. Add the tomato base and broth: Pour in the tomato basil pasta sauce, diced canned tomatoes, and chicken broth. Stir well and bring the mixture to a boil.
  3. Cook the noodles and simmer: Add the broken lasagna noodles to the pot along with the remaining 1 teaspoon of kosher salt (or more to taste). Reduce the heat to a simmer and cook until the noodles are tender, typically about 10-12 minutes.
  4. Add cream and cheese for richness: Stir in the heavy cream to make the soup creamy. If you prefer a thinner soup, add 1-2 cups of extra chicken broth at this point. For an extra cheesy flavor, stir in some shredded mozzarella or parmesan cheese directly into the soup until melted and well combined.
  5. Serve with cheese and basil garnish: Ladle the lasagna soup into bowls. Top each serving with spoonfuls of ricotta cheese, additional shredded mozzarella, parmesan cheese, and a sprinkle of fresh chopped basil. Serve immediately and enjoy your comforting creamy lasagna soup!

Notes

  • You can adjust the thickness of the soup by adding more or less chicken broth according to your preference.
  • For a vegetarian version, substitute the ground beef with plant-based meat or sautéed mushrooms.
  • If you like a spicier soup, increase the red pepper flakes or add a dash of crushed chili powder.
  • To save time, pre-cooked or no-boil lasagna noodles can be used, adjusting the cooking time accordingly.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or microwave.
