This Easy Butternut Squash Casserole is a comforting and flavorful dish featuring tender butternut squash, cauliflower, and red onions blended with Parmesan cheese and celery soup, all topped with melted aged cheddar cheese. Perfect as a side or a vegetarian main, it is simple to prepare and bakes to a golden, bubbly perfection.

Ingredients

Scale

For the Casserole:

  • 1 tsp sea salt
  • 1/2 cup diced red onions
  • 1 can celery soup (Campbell’s brand recommended)
  • 2 cups cauliflower florets
  • 1 cup Parmesan cheese, freshly grated
  • 2 cups butternut squash, cubed
  • 1 tsp black pepper

For the Topping:

  • Aged cheddar cheese, shredded (quantity to preference for topping)

Instructions

  1. Prepare the Vegetables: In a large bowl, combine 2 cups of cauliflower florets, 2 cups of cubed butternut squash, and 1/2 cup of diced red onions. Mix gently to bring all the vegetables together.
  2. Add Cheese and Seasonings: Add 1 cup of freshly grated Parmesan cheese to the vegetables. Season the mixture with 1 teaspoon sea salt and 1 teaspoon black pepper. Stir to distribute the seasoning evenly.
  3. Mix and Combine: Pour 1 can of celery soup into the bowl with the vegetables and cheese. Mix thoroughly until all ingredients are well combined and coated with the soup.
  4. Assemble the Casserole: Transfer the vegetable mixture into a square baking dish, spreading it evenly. Generously sprinkle shredded aged cheddar cheese evenly over the top of the mixture to create a cheesy crust.
  5. Bake the Casserole: Preheat the oven to 375°F (190°C). Place the baking dish in the oven and bake for 25 minutes or until the cheese topping is melted, golden, and bubbly, and the vegetables are tender when pierced with a fork.
  6. Serve and Enjoy: Carefully remove the casserole from the oven and let it cool for a few minutes. Serve warm as a hearty side dish or a satisfying vegetarian entrée.

Notes

  • Freshly grated Parmesan cheese offers better flavor and melts more smoothly compared to pre-grated varieties.
  • The amount of aged cheddar for topping can be adjusted according to preference for cheesiness.
  • You can substitute the celery soup with a homemade cream of celery sauce for a fresher taste.
  • For extra texture, consider adding toasted breadcrumbs on top before baking.
  • This casserole reheats well and can be stored covered in the refrigerator for up to 3 days.
