Ingredients

Scale

Cookie Bars

  • 16.5 oz tube refrigerated sugar cookie dough
  • About 8 Peeps marshmallow candies in various colors
  • Non-stick cooking spray (for greasing and spatula)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the cookie bars.
  2. Prepare Baking Dish: Grease an 8×8 inch baking dish thoroughly with non-stick cooking spray to prevent sticking.
  3. Press Dough Base: Press half of the refrigerated sugar cookie dough evenly into the bottom of the prepared baking dish to form the cookie base layer.
  4. Add Peeps: Evenly place the Peeps marshmallow candies over the pressed cookie dough, spacing them to distribute colors and marshmallows evenly.
  5. Top with Remaining Dough: Break the remaining cookie dough into pieces and scatter them gently over the Peeps layer to create a top cookie layer.
  6. Bake First Interval: Bake the layered dough and Peeps in the preheated oven for 8 minutes to start melting the Peeps and partially cooking the dough.
  7. Swirl Peeps: Remove from oven and using a spatula sprayed with non-stick spray, lightly swirl the softened Peeps marshmallows to blend them somewhat with the dough.
  8. Bake Second Interval: Return the dish to the oven and bake for an additional 12 minutes or until the cookie bars turn golden and fully cooked through.
  9. Cool: Let the bars cool completely at room temperature so they firm up for easier slicing.
  10. Chill: Refrigerate the cooled bars for one hour to ensure they become firm enough to slice cleanly.
  11. Slice and Serve: Use a butter knife sprayed with non-stick spray to slice the bars into 9 pieces. Serve and enjoy!

Notes

  • Chilling the bars before slicing helps them stay intact and prevents crumbling.
  • Spraying the knife with non-stick spray reduces sticking and ensures cleaner cuts.
  • Store any leftover bars in the refrigerator to maintain freshness and prevent melting.
