  • 1 package Cadbury Mini Eggs (about 8 ounces)

Instructions

  1. Mix Cereals: In a very large bowl, combine 6 cups of Rice Chex cereal and 6 cups of Frosted Cheerios cereal. Stir gently to mix both cereals evenly.
  2. Melt Almond Bark: Break the 1 pound of vanilla almond bark into chunks and place them in a microwave-safe bowl. Microwave on high for 1 minute, then remove and stir well. Continue heating in 15 to 30-second intervals, stirring after each, until the almond bark is completely melted and smooth.
  3. Combine Coating and Cereal: Pour the melted almond bark over the mixed cereal in the large bowl. Stir thoroughly to coat all the cereal pieces with the melted almond bark. If desired, you can add more cereal to get the desired amount.
  4. Add Candies (Optional Method 1): For better candy adhesion, add the Easter M&Ms and Cadbury Mini Eggs directly into the coated cereal mixture and mix gently to distribute the candies throughout.
  5. Spread Mixture: Spread the cereal and candy mixture onto a large piece of waxed paper in an even layer. If you chose not to mix candies in the previous step, sprinkle them evenly over the top now.
  6. Set the Mixture: Let the Easter Chex Mix sit at room temperature for about 1 hour to allow the almond bark to harden and the mix to set properly.
  7. Serve: Once set, break up the mixture with your hands into bite-sized clusters and serve immediately or store in an airtight container for later enjoyment.
