  • 1/4 teaspoon salt
  • 1 pint chocolate ice cream (or dairy-free alternative)
  • 1/2 cup dark chocolate chips, melted
  • 1/4 cup chopped roasted nuts (e.g., hazelnuts or almonds)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt butter and chocolate chips together in a saucepan or microwave until smooth. Let cool slightly.
  3. In a bowl, whisk sugar, eggs, and vanilla. Add melted chocolate mixture and stir until combined.
  4. Fold in flour, cocoa powder, baking powder, and salt until just mixed.
  5. Drop spoonfuls of dough onto the baking sheet and flatten slightly. Bake 10–12 minutes. Let cool completely.
  6. Scoop ice cream onto one brownie cookie and top with another to form a sandwich. Freeze for 1 hour until firm.
  7. Dip each sandwich halfway in melted chocolate and sprinkle with chopped nuts. Return to freezer until set.
