- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/4 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1 egg yolk
- 1–2 tbsp ice water
- 1/2 cup heavy cream
- 4 oz dark chocolate (70%), chopped
- 1 tbsp unsalted butter
- 1/4 tsp vanilla extract
- 1/3 cup toasted hazelnuts, roughly chopped
- Dark chocolate shavings or curls (for topping)
- Preheat oven to 350°F (175°C). Grease a mini tart pan or tartlet tins.
- In a food processor, pulse flour, powdered sugar, and salt. Add cold butter and pulse until mixture forms fine crumbs.
- Add egg yolk and ice water gradually until dough comes together. Do not overmix.
- Press dough into tartlet pans and chill for 15 minutes.
- Bake tart shells for 12–15 minutes until lightly golden. Let cool completely.
- To make ganache, heat cream in a small saucepan until steaming (not boiling).
- Pour over chopped dark chocolate in a bowl and let sit 1 minute, then stir until smooth.
- Stir in butter and vanilla extract. Let ganache cool slightly before using.
- Pour ganache into the cooled tart shells.
- Top with chopped toasted hazelnuts and chocolate shavings.
- Chill for at least 1 hour or until ganache is set.
- Serve slightly chilled or at room temperature.

- Use high-quality dark chocolate for the best flavor and texture.
- Toast hazelnuts in a dry skillet for 5–7 minutes for extra depth of flavor.
- These tartlets can be made a day ahead and stored chilled until ready to serve.
