Ingredients

Scale

Cookie Dough

  • 1/2 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1/3 cup granulated sugar
  • 1/2 cup carrots (shredded)
  • 1 tbsp vanilla extract
  • 1 egg yolk
  • 3 tbsp heavy cream (at room temperature)
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/8 tsp allspice
  • 1/4 tsp ginger
  • pinch of cloves
  • 1/4 tsp salt

Cream Cheese Frosting

  • 4 oz cream cheese (softened)
  • 3 tbsp butter (salted or unsalted, softened)
  • 1 tsp vanilla extract
  • 3/4 cup powdered sugar
  • Pecans (for topping, chopped)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a non-stick baking mat. Set aside.
  2. Cream butter and sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and creamy, ensuring no lumps remain.
  3. Add wet ingredients: Mix in the shredded carrots, vanilla extract, egg yolk, and room temperature heavy cream until fully combined and smooth.
  4. Incorporate dry ingredients: Add the all-purpose flour, baking powder, baking soda, cinnamon, allspice, ginger, cloves, and salt to the wet mixture. Mix gently and just until the flour is fully incorporated and no streaks remain, careful not to overmix.
  5. Shape cookies: Scoop out 8 equal portions of cookie dough and place them on the prepared baking sheet. Gently flatten each dough ball to about 3/4 to 1 inch thickness to ensure even baking.
  6. Bake cookies: Bake in the preheated oven for 12 minutes. The cookies should be set but still soft in the center at this point.
  7. Cool cookies: Allow the cookies to cool on the baking sheet for 20 minutes to firm up before transferring them to a wire rack to cool completely.
  8. Prepare frosting: Using a stand mixer fitted with a whisk attachment, beat the softened cream cheese and butter together until smooth and creamy.
  9. Finish frosting: Add the vanilla extract and powdered sugar to the cream cheese mixture. Whip for 4-5 minutes until the frosting is light, fluffy, and spreadable.
  10. Frost and top: Using a piping bag with a round tip, frost each cooled cookie evenly. Sprinkle the chopped pecans on top for added texture and flavor.
  11. Serve and enjoy: Serve these delicious carrot cake cookies at room temperature and enjoy the perfect blend of spice, sweetness, and creamy frosting.

Notes

  • Make sure carrots are finely shredded to integrate well into the dough and provide moisture.
  • Do not overmix the dough after adding the flour to keep cookies tender.
  • Allow cookies to cool before frosting to prevent the frosting from melting.
  • Use fresh spices for the best flavor intensity.
  • Store cookies in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
