Crispy Roasted Potatoes with Feta & Herbs

Golden baby potatoes roasted to perfection, then tossed with creamy feta cheese and fragrant fresh herbs. This Mediterranean-inspired side dish is crispy on the outside, tender on the inside, and bursting with savory flavor.

  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh thyme leaves
  • Optional: squeeze of lemon juice before serving

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss halved baby potatoes with olive oil, garlic, salt, pepper, oregano, and paprika until evenly coated.
  3. Spread potatoes cut-side down on a baking sheet lined with parchment paper.
  4. Roast for 30–35 minutes, flipping halfway, until crispy and golden brown.
  5. Remove from the oven and immediately sprinkle with crumbled feta and fresh thyme.
  6. Serve warm, with a light squeeze of lemon juice for brightness if desired.

Notes

  • Use vegan feta to make this dish plant-based.
  • Try with rosemary or dill instead of thyme for variation.
