Ingredients

Scale

Rice Paper Pancake

  • 2 sheets rice paper
  • 1 large egg (whisked)
  • 2 stalks scallions (sliced)
  • 1/2 cup carrot (shredded)
  • 1/2 cup cooked shrimp or firm tofu (chopped)
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce or sriracha
  • 1 tablespoon vegetable oil

Garnish

  • 1/4 cup fresh herbs (cilantro or mint)
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Heat the skillet: Begin by warming your nonstick 10-inch skillet over medium heat. Once hot, add in the vegetable oil, allowing it to coat the bottom evenly.
  2. Prepare the filling: In a small bowl, whisk the egg until fluffy, then mix in the sliced scallions, shredded carrot, and finely chopped shrimp or tofu.
  3. Moisten the rice paper: Lightly brush or mist one rice paper sheet with water until it’s just pliable. Lay it flat in the hot skillet.
  4. Spread the filling: Gently spread the egg mixture evenly over the rice paper in a thin layer. Drizzle the soy sauce and chili sauce generously across the top.
  5. Layer the second sheet: Carefully place the second rice paper sheet over the filling and press lightly with a spatula.
  6. Cook and crisp: Sauté until the bottom is golden and crisp, about 3 to 4 minutes. Flip and allow to cook for an additional 2 minutes.
  7. Serve it up: Finish with freshly chopped herbs and toasted sesame seeds if desired. Cut into wedges and serve warm.

Notes

  • Use either cooked shrimp or firm tofu as protein depending on your preference.
  • Adjust the amount of chili sauce to control the heat level.
  • Make sure the rice paper is just pliable before cooking to prevent tearing.
  • Serve immediately for maximum crispiness, as rice paper tends to soften once cooled.
