- 1 large head of cauliflower, cut into florets
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- Lemon wedges, for serving
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss cauliflower florets with olive oil, Parmesan, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Spread the cauliflower in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, turning halfway, until cauliflower is golden brown and crispy on the edges.
- Transfer to a serving dish, sprinkle with fresh parsley, and serve with lemon wedges for extra brightness.
Notes
- For extra crispiness, broil the cauliflower for the last 2–3 minutes of roasting.
- Try adding a pinch of chili flakes for a spicy kick.
- This dish is best served immediately while still crispy.
