Crispy Parmesan Roasted Cauliflower

Tender cauliflower florets roasted to golden perfection with a crispy Parmesan and spice coating, finished with fresh parsley and a squeeze of lemon for a flavorful, healthy side dish.

  • 1 large head of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil, Parmesan, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the cauliflower in a single layer on the prepared baking sheet.
  4. Roast for 25–30 minutes, turning halfway, until cauliflower is golden brown and crispy on the edges.
  5. Transfer to a serving dish, sprinkle with fresh parsley, and serve with lemon wedges for extra brightness.

Notes

  • For extra crispiness, broil the cauliflower for the last 2–3 minutes of roasting.
  • Try adding a pinch of chili flakes for a spicy kick.
  • This dish is best served immediately while still crispy.
