Crispy Mushroom Potato Croquettes

Golden and crunchy on the outside, these croquettes are filled with creamy mashed potatoes and savory sautéed mushrooms—perfect for dipping and ideal as a comforting appetizer or party snack.

  • 2 cups mashed potatoes (cold, firm)
  • 1 cup finely chopped mushrooms
  • 1/2 small onion, finely chopped
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 3/4 cup panko breadcrumbs
  • Oil, for frying

Instructions

  1. In a skillet, heat olive oil and sauté chopped onion and mushrooms until all moisture evaporates and mixture is browned. Season with garlic powder, salt, and pepper. Let cool.
  2. In a bowl, combine mashed potatoes, cooled mushroom mixture, and Parmesan (if using). Mix well.
  3. Scoop about 2 tablespoons of the mixture and shape into small logs or balls.
  4. Roll each croquette in flour, dip in beaten egg, then coat in panko breadcrumbs.
  5. Heat oil in a deep skillet or fryer to 350°F (175°C). Fry croquettes in batches until golden and crispy, about 3–4 minutes. Drain on paper towels.
  6. Sprinkle with extra salt and serve hot with ketchup or your favorite dipping sauce.

Notes

  • Ensure the mashed potatoes are cold and firm to help the croquettes hold their shape.
  • You can use any mushrooms you like, but button mushrooms or cremini work best for this recipe.
  • For a different twist, add some fresh herbs, such as parsley or thyme, to the mixture before frying.
