Crispy Garlic Roasted Potatoes

Perfectly golden on the outside and fluffy on the inside, these garlic roasted potatoes are coated in herbs and spices for a savory side dish that pairs with everything.

  • 2 lbs Yukon gold or russet potatoes, peeled and cut into chunks
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Bring a large pot of salted water to a boil. Add potato chunks and parboil for 7–8 minutes until slightly tender but not fully cooked. Drain well.
  3. Transfer potatoes to a large bowl. Add olive oil, minced garlic, garlic powder, onion powder, paprika, thyme, salt, and pepper. Toss until evenly coated.
  4. Spread potatoes in a single layer on the prepared baking sheet. Roast for 35–40 minutes, flipping halfway, until golden brown and crispy on all sides.
  5. Remove from oven and sprinkle with fresh parsley before serving.

Notes

  • Parboiling helps create a fluffy interior and crispy exterior.
  • Feel free to add Parmesan cheese during the last 10 minutes of baking for extra flavor.
  • These potatoes reheat well in the oven or air fryer.
