- 4 boneless, skinless chicken breasts (pounded to 1/2 inch thick)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- Vegetable oil, for frying
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp mirin (or honey)
- 1 tsp Dijon mustard
- Lime or lemon wedges
- Shredded cabbage or steamed rice (optional)
- Season chicken with salt and pepper. Dredge each cutlet in flour, dip in beaten egg, and coat evenly with panko breadcrumbs.
- Heat 1/2 inch of oil in a skillet over medium-high heat. Fry chicken in batches for 3–4 minutes per side, until golden and crispy. Drain on paper towels.
- In a small bowl, whisk together all tonkatsu sauce ingredients until smooth.
- Slice chicken into strips and serve hot with the tonkatsu sauce on the side and fresh lime wedges.
- Optional: Serve with rice or cabbage slaw for a full meal.

- Ensure oil is hot enough to prevent soggy coating—test with a breadcrumb first.
