Crispy Baked Beef Sambousek Rolls with Yogurt Sumac Dip

Golden, oven-baked Middle Eastern sambousek rolls filled with spiced ground beef, pine nuts, and onions, wrapped in thin pastry and topped with tangy sumac. Served with a cooling yogurt dip, this dish offers irresistible crunch, warmth, and zesty brightness in each bite.

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1/2 lb ground beef or lamb
  • 2 tablespoons toasted pine nuts
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 12 phyllo or spring roll sheets, thawed
  • 2 tablespoons melted butter or olive oil (for brushing)
  • 1 teaspoon ground sumac
  • 1 cup plain yogurt
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • Salt to taste
  • Extra sumac for topping

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions until soft.
  2. Add ground beef and cook until browned.
  3. Stir in ground allspice, cinnamon, salt, pepper, and toasted pine nuts. Let the filling cool.
  4. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  5. Cut phyllo or spring roll wrappers into halves or quarters depending on desired roll size.
  6. Place a spoonful of filling at one end of the wrapper, roll tightly, and seal with a dab of water.
  7. Place rolls seam-side down on the tray. Brush tops with melted butter or olive oil and sprinkle with sumac.
  8. Bake for 20–25 minutes or until golden and crisp.
  9. Mix yogurt, garlic, lemon juice, and salt in a bowl for the dip. Garnish with a pinch of sumac.
  10. Serve the sambousek rolls hot with the yogurt dip and lemon wedges.

Notes

  • You can substitute beef with lamb for a richer flavor.
  • Phyllo sheets must be handled carefully to prevent tearing; keep them covered with a damp towel while working.
  • Make ahead and reheat in the oven to maintain crispiness.
