Creamy Whipped Feta with Roasted Cherry Tomato Relish

A luxuriously smooth whipped feta base topped with sweet roasted cherry tomatoes, toasted pine nuts, fresh herbs, and a drizzle of olive oil. Served with crispy crostini, this dish makes the perfect elegant appetizer or vibrant centerpiece for a Mediterranean spread.

  • 1 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Freshly ground black pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 small shallot, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup pine nuts, toasted
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Crostini or toasted baguette slices

Instructions

  1. Add feta, Greek yogurt, olive oil, lemon juice, and black pepper to a food processor. Blend until completely smooth and creamy. Set aside or chill.
  2. Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Roast on a lined baking sheet for 15–20 minutes until soft and slightly blistered.
  3. In a bowl, combine roasted tomatoes, shallots, parsley, toasted pine nuts, and red pepper flakes. Stir gently to mix.
  4. Spread whipped feta into a shallow serving bowl. Spoon tomato relish over the top.
  5. Finish with a drizzle of olive oil and extra cracked black pepper. Serve with toasted crostini.

Notes

  • For ultra-smooth whipped feta, blend for 2–3 minutes and scrape down sides as needed.
  • Use high-quality feta for best flavor—preferably block-style in brine.
  • Make ahead: whipped feta and tomato relish can be prepped a day in advance.
  • Garnish with extra herbs or lemon zest for added brightness.
