Creamy Garlic Zoodles with Grilled Chicken

  • For the Chicken:
  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • For the Zoodles & Sauce:
  • 3 medium zucchinis, spiralized
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill chicken for 6–7 minutes per side, or until fully cooked and golden. Let rest, then slice.
  4. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  5. Pour in heavy cream, bring to a gentle simmer, and stir in Parmesan. Cook for 2–3 minutes until slightly thickened.
  6. Add spiralized zucchini and toss gently to coat. Cook for 2–3 minutes until zoodles are just tender but not mushy.
  7. Season with salt, pepper, and red pepper flakes to taste.
  8. Plate creamy zoodles and top with sliced grilled chicken. Serve immediately.

Notes

  • Do not overcook the zucchini noodles to avoid a soggy texture.
  • Use a spiralizer or purchase pre-spiralized zucchini for convenience.
  • For extra flavor, marinate the chicken ahead of time.
