- 12 oz farfalle pasta (bow-tie)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 16 oz cremini or white mushrooms, sliced
- 1 teaspoon dried thyme
- 1/2 cup vegetable broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and freshly cracked black pepper to taste
- Optional: fresh parsley for garnish
- Cook farfalle pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Add sliced mushrooms and thyme. Cook for 7–9 minutes until mushrooms are browned and tender.
- Pour in vegetable broth and simmer for 2 minutes.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese. Mix until smooth and creamy.
- Add the cooked pasta and toss gently to coat with the sauce.
- Season with salt and pepper to taste.
- Garnish with chopped parsley if desired and serve hot.
