Creamy Garlic Mushroom Farfalle

A rich and comforting pasta dish featuring buttery sautéed mushrooms, tender farfalle, and a luscious garlic cream sauce—perfect for a cozy dinner night.

  • 12 oz farfalle pasta (bow-tie)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 16 oz cremini or white mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1/2 cup vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly cracked black pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Cook farfalle pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  3. Add sliced mushrooms and thyme. Cook for 7–9 minutes until mushrooms are browned and tender.
  4. Pour in vegetable broth and simmer for 2 minutes.
  5. Reduce heat to low. Stir in heavy cream and Parmesan cheese. Mix until smooth and creamy.
  6. Add the cooked pasta and toss gently to coat with the sauce.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped parsley if desired and serve hot.

Notes

  • Use a mix of mushrooms for added depth of flavor.
  • For a lighter version, substitute half-and-half for heavy cream.
  • Can be made vegetarian by using vegetarian Parmesan or omitting cheese.
