Creamy Cilantro Lime Chicken with Rice

Juicy grilled chicken breasts in a rich cilantro lime cream sauce, served over fluffy white rice — zesty, creamy, and perfect for a comforting weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup freshly squeezed lime juice
  • 1 tsp lime zest
  • 1/4 cup chopped fresh cilantro
  • 2 cups cooked white rice
  • Extra lime slices and cilantro for garnish

Instructions

  1. Season chicken breasts with olive oil, salt, pepper, paprika, and garlic powder.
  2. Grill or sear in a skillet over medium-high heat until golden brown and cooked through, about 6–7 minutes per side. Set aside.
  3. In the same skillet, reduce heat to medium. Add butter and minced garlic, and sauté for 1 minute.
  4. Pour in chicken broth and let it simmer for 2 minutes.
  5. Add heavy cream, lime juice, and lime zest. Stir and simmer for 3–4 minutes until slightly thickened.
  6. Add chopped cilantro and season with salt and pepper.
  7. Return chicken to the skillet and spoon sauce over it. Simmer for 2–3 minutes until warmed through.
  8. Serve the chicken over cooked white rice with extra sauce. Garnish with lime slices and more cilantro.

Notes

  • For a lighter version, substitute half-and-half or coconut milk for heavy cream.
  • Use a meat thermometer to ensure chicken reaches 165°F (74°C) internally.
  • This dish pairs well with a side of sautéed vegetables or black beans.
