  • 1/2 yellow onion, finely diced

Sauce

  • 5 tbsp butter
  • 2 tbsp olive oil
  • 2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 tsp chicken bouillon powder
  • 1/3 cup all-purpose flour

Instructions

  1. Cook Orzo: Prepare the orzo pasta according to the package instructions. Once cooked, drain and set aside.
  2. Season and Cook Chicken: Season the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until the internal temperature reaches 165°F (74°C). Remove, dice into bite-sized pieces, and set aside.
  3. Sauté Vegetables: In a large skillet over medium-high heat, melt butter with olive oil. Add the diced onion, carrots, and celery, and sauté for 4–5 minutes until the vegetables are softened and fragrant.
  4. Make Roux: Lower the heat to medium-low and sprinkle the flour over the sautéed vegetables. Whisk continuously to incorporate the flour and cook for 2–3 minutes to remove the raw flour taste.
  5. Add Liquids: Gradually whisk in the chicken broth combined with chicken bouillon powder and heavy whipping cream to the vegetable-flour mixture. Continue whisking until the sauce is smooth and thickened to a creamy consistency.
  6. Combine and Simmer: Stir the diced chicken into the creamy sauce and simmer until the mixture thickens to your preferred consistency.
  7. Finish With Orzo: Stir the drained orzo into the creamy chicken and vegetable mixture until well incorporated and heated through.
