Creamy Chicken Avocado Sandwich

A soft and hearty sandwich filled with tender shredded chicken, creamy avocado slices, fresh herbs, and a hint of lemon, perfect for a satisfying lunch or light dinner.

Ingredients

  • 2 cups cooked shredded chicken breast
  • 1 ripe avocado, sliced
  • 4 slices thick white sandwich bread
  • 3 tbsp mayonnaise
  • 1 tbsp Greek yogurt (optional for lightness)
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley or cilantro
  • Salt and pepper to taste
  • Optional: pickles, for serving

Instructions

  1. In a bowl, combine shredded chicken, mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, parsley, salt, and pepper. Mix until creamy and well blended.
  2. Slice the avocado and set aside.
  3. Lay out the bread slices and layer the chicken mixture evenly on two of them.
  4. Top with fresh avocado slices and a sprinkle of extra herbs if desired.
  5. Place the remaining bread slices on top and press gently.
  6. Slice sandwiches in half and serve with pickles or chips on the side.
  7. Best enjoyed fresh, but can be wrapped and stored in the fridge for up to 1 day.

Notes

  • Use rotisserie chicken for convenience and extra flavor.
  • Toast the bread lightly for added texture.
  • For a spicy kick, add a dash of hot sauce or sliced jalapeños.
