Cranberry Oatmeal Crumble Bars

Chewy oatmeal bars layered with tart cranberries and a hint of honey, these rustic crumble bars are a cozy and wholesome treat perfect for the holiday season or a winter breakfast snack.

  • 1 ½ cups rolled oats
  • 1 ¼ cups all-purpose flour
  • ½ cup light brown sugar, packed
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ¾ cup unsalted butter, melted
  • 2 cups fresh or frozen cranberries
  • ⅓ cup honey (or maple syrup)
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • ⅓ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, salt, and cinnamon.
  3. Add melted butter and mix until crumbly.
  4. Press 2/3 of the oat mixture into the bottom of the prepared pan and press down firmly to form a crust.
  5. In a saucepan over medium heat, combine cranberries, honey, vanilla, and cornstarch.
  6. Stir and cook until the cranberries burst and the mixture thickens, about 5–7 minutes. Let cool slightly.
  7. Spread the cranberry mixture evenly over the crust.
  8. Sprinkle remaining oat mixture and walnuts on top, pressing lightly.
  9. Bake for 30–35 minutes, or until golden brown.
  10. Let cool completely in the pan before slicing into bars.

Notes

  • For a vegan version, use maple syrup and plant-based butter.
  • Use frozen cranberries without thawing to avoid excess moisture.
  • Bars store well in an airtight container for up to 5 days.
  • Chilling before slicing helps bars hold their shape better.
