Ingredients

Scale

Steaks and Sliders

  • 1 1/2 pounds boneless steak such as ribeye, filet, or sirloin
  • Neutral oil, as needed
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 9 slider buns
  • 3/4 pound sliced Havarti cheese

Cowboy Butter

  • 1 stick unsalted butter, at room temperature
  • 4 garlic cloves, minced
  • 1/2 lemon, zested and juiced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chives, minced
  • 2 tablespoons fresh parsley, minced
  • Kosher salt and pepper, to taste

Caramelized Onions

  • 3 sweet onions, thinly sliced
  • Butter, 2-3 tablespoons for caramelizing

Instructions

  1. Prepare Steaks: Trim any excess fat and silver skin from the steaks. Rub the steaks with neutral oil and season generously on all sides with kosher salt and freshly cracked black pepper. For thicker cuts, apply more seasoning for better flavor.
  2. Season Steaks: Wrap the seasoned steaks tightly in plastic wrap and refrigerate for a few hours to let the flavors penetrate deeply.
  3. Make Cowboy Butter: In a saucepan over low heat, melt the unsalted butter, whisking continuously to ensure smoothness. Add lemon juice and zest, minced garlic, Dijon mustard, paprika, cayenne, dried thyme, and red pepper flakes to the melted butter.
  4. Finish Cowboy Butter: Remove the butter from heat and stir in minced chives and parsley. Season with kosher salt and freshly ground black pepper to taste. Spoon a few tablespoons of this butter into a small bowl to use during grilling, and set the rest aside for buttering the slider buns.
  5. Prepare Grill: Preheat your grill to medium-high heat and create an indirect heat zone. Remove the steaks from the fridge and let them come to room temperature, approximately 30 minutes.
  6. Grill Steaks: Place steaks over direct heat and cook for about 2-3 minutes per side, careful not to char. If flare-ups occur, move steaks to indirect heat briefly until flames reduce. Brush both sides with cowboy butter throughout grilling.
  7. Finish Steaks: After approximately 5-6 minutes of direct cooking, transfer steaks to the indirect heat zone and continue cooking until they reach your desired internal temperature.
  8. Rest Steaks: Remove steaks from the grill and let them rest on a plate covered loosely with foil for 10 minutes before slicing thinly.
  9. Caramelize Onions: Place a cast iron skillet on the grill over direct heat. Add 2-3 tablespoons of butter, and once melted, add thinly sliced onions. Cook, stirring occasionally, for about 15 minutes until the onions are soft and caramelized.
  10. Preheat Oven Broiler: Set your oven to broil and line a baking sheet with parchment paper to prepare for melting cheese on the sliders.
  11. Assemble Sliders: Separate the slider buns and brush the inside of both top and bottom halves generously with the reserved cowboy butter. Layer Havarti cheese on both halves, then add caramelized onions on the bottom buns.
  12. Add Steak and Broil: Place a few slices of grilled steak onto each bottom bun. Arrange sliders on the baking sheet and broil for 1-2 minutes or until the cheese starts to melt.
  13. Serve: Place the top buns on the steak layers, slice the sliders if desired, and serve immediately to enjoy the warm, buttery, flavorful delights.

Notes

  • Allowing the steaks to rest at room temperature before grilling ensures even cooking.
  • Make sure to create an indirect heat zone on your grill to prevent over-charring and to cook steaks perfectly.
  • The cowboy butter can be made ahead and stored in the refrigerator; bring to room temperature before using.
  • Use a cast iron skillet for perfect caramelization of onions on the grill.
  • If you prefer a milder slider, adjust or omit the cayenne and red pepper flakes in the cowboy butter.
  • Letting the steak rest after grilling locks in the juices for maximum flavor.
