Cowboy Butter Steak Bites are a quick and flavorful dish featuring tender sirloin or ribeye steak pieces seared to perfection and tossed in a rich, garlicky butter sauce spiced with red pepper flakes and cayenne. This recipe is perfect for a hearty appetizer or main served with crusty bread, mashed potatoes, or rice.

Ingredients

Scale

Steak

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (for searing)

Cowboy Butter Sauce

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Steak: Pat the steak dry with paper towels and cut into bite-sized cubes. Season evenly with salt and black pepper to taste.
  2. Sear the Steak Bites: Heat a cast iron skillet over high heat and add the olive oil. Sear the steak bites in batches to avoid overcrowding, cooking until browned on all sides. Remove the steak bites from the skillet and set aside.
  3. Make the Cowboy Butter Sauce: Reduce the skillet heat to medium. Add the unsalted butter and let it melt. Stir in the minced garlic, Dijon mustard, fresh lemon juice, red pepper flakes, and cayenne pepper. Let the sauce simmer gently for 1–2 minutes until fragrant and well combined.
  4. Combine Steak with Sauce: Return the seared steak bites to the skillet and toss them thoroughly in the cowboy butter sauce. Allow the mixture to heat through for an additional minute to blend the flavors.
  5. Garnish and Serve: Sprinkle the chopped fresh parsley over the top. Serve the steak bites hot alongside crusty bread, mashed potatoes, or rice for a satisfying meal.

Notes

  • Use a cast iron skillet for best searing results and flavor development.
  • Do not overcrowd the pan; sear steak in batches to achieve a good crust.
  • Adjust cayenne pepper and red pepper flakes to control the spice level.
  • Steak bites are best enjoyed immediately for optimal tenderness and flavor.
  • Can substitute sirloin or ribeye with other tender cuts of beef if desired.
