Wet Ingredients
- 1 cup unsalted butter (2 sticks, at room temperature)
- 3/4 cup dark brown sugar (packed)
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1 large egg yolk
Dry Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 cup old fashioned oats
Mix-ins
- 1 1/4 cups holiday M&M’s (red and green, divided)
- 1 cup salted pretzel twists (broken into pieces)
- 1 cup semi-sweet chocolate chunks (or dark chocolate chunks)
- 1/2 cup white chocolate chips
- Preheat oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- Cream butter and sugars: In a large mixing bowl, beat together the room temperature unsalted butter, dark brown sugar, granulated sugar, and vanilla extract until the mixture is smooth and well combined.
- Add eggs: Beat in the two large eggs followed by the additional egg yolk one at a time, ensuring each is fully incorporated before adding the next.
- Combine dry ingredients: In a separate bowl, mix all-purpose flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and beat until just combined, then stir in the old fashioned oats.
- Fold in mix-ins: Gently fold in 1 cup of the holiday M&M’s, broken pretzel twists, semi-sweet chocolate chunks, and white chocolate chips until evenly distributed.
- Shape cookies: Roll the dough into 1/4 cup sized balls and place them at least 3 inches apart on the prepared baking sheets to allow spreading.
- First bake: Bake the cookies in the preheated oven for 8 minutes, then rotate the pans to ensure even baking and continue baking for an additional 2 minutes.
- Add remaining M&M’s: Remove the baking sheets from the oven, press the remaining 1/4 cup of M&M’s into the tops of the cookies, then return to the oven and bake for another 2 to 3 minutes until the cookies are golden and set.
- Cool: Remove the cookies from the oven and allow them to cool on the baking sheet. They will continue to cook slightly and firm up as they cool.
- Serve: Enjoy the cookies warm for the best flavor and texture, or let them cool completely before storing in an airtight container.
Notes
- For perfectly shaped cookies, measure dough balls with a 1/4 cup scoop.
- Room temperature butter helps achieve a better texture when creaming with sugars.
- Pressing M&M’s onto the cookie tops after initial baking prevents them from melting completely and keeps the festive colors vibrant.
- Cookies can be stored in an airtight container at room temperature for up to 5 days.
- To keep cookies fresh longer, freeze baked cookies in an airtight container for up to 3 months.
