Chocolate Peanut Caramel Tart

A decadent tart with a buttery crust, rich chocolate ganache, gooey homemade caramel, and crunchy roasted peanuts.

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup cold unsalted butter, cubed
  • 12 tablespoons cold water
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1/4 cup heavy cream (for caramel)
  • 2 tablespoons unsalted butter (for caramel)
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 1/2 cup roasted salted peanuts, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine flour and powdered sugar. Cut in the cold butter until mixture is crumbly.
  3. Add cold water, 1 tablespoon at a time, until dough just comes together.
  4. Press dough into a tart pan and prick the bottom with a fork.
  5. Bake for 18–20 minutes until golden brown. Let cool completely.
  6. To make caramel, heat sugar and water in a saucepan over medium heat without stirring until it turns deep amber.
  7. Remove from heat and carefully stir in cream and butter. Add a pinch of salt and let cool slightly.
  8. Pour caramel into cooled tart crust and chill until firm.
  9. For the ganache, heat cream until just simmering. Pour over chocolate chips and let sit for 2 minutes.
  10. Stir until smooth, then pour over the chilled caramel layer and spread evenly.
  11. Sprinkle chopped roasted peanuts generously on top.
  12. Chill the tart for at least 2 hours or until set.
  13. Slice and serve at room temperature for best texture.

Notes

  • Use a tart pan with a removable bottom for easier serving.
  • Make sure the caramel is fully set before pouring ganache.
  • Can be made a day ahead and stored in the fridge.
