Chocolate Peanut Caramel Tart

- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cold unsalted butter, cubed
- 1–2 tablespoons cold water
- 1/2 cup granulated sugar
- 2 tablespoons water
- 1/4 cup heavy cream (for caramel)
- 2 tablespoons unsalted butter (for caramel)
- Pinch of salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
- 1/2 cup roasted salted peanuts, chopped
- Preheat oven to 350°F (175°C).
- In a bowl, combine flour and powdered sugar. Cut in the cold butter until mixture is crumbly.
- Add cold water, 1 tablespoon at a time, until dough just comes together.
- Press dough into a tart pan and prick the bottom with a fork.
- Bake for 18–20 minutes until golden brown. Let cool completely.
- To make caramel, heat sugar and water in a saucepan over medium heat without stirring until it turns deep amber.
- Remove from heat and carefully stir in cream and butter. Add a pinch of salt and let cool slightly.
- Pour caramel into cooled tart crust and chill until firm.
- For the ganache, heat cream until just simmering. Pour over chocolate chips and let sit for 2 minutes.
- Stir until smooth, then pour over the chilled caramel layer and spread evenly.
- Sprinkle chopped roasted peanuts generously on top.
- Chill the tart for at least 2 hours or until set.
- Slice and serve at room temperature for best texture.
Notes
- Use a tart pan with a removable bottom for easier serving.
- Make sure the caramel is fully set before pouring ganache.
- Can be made a day ahead and stored in the fridge.
