For the bars

  • 2 bananas, overripe, mashed (~1 cup)
  • 1/4 cup creamy peanut butter
  • 1 large egg
  • 1/2 cup coconut sugar or organic cane sugar
  • 1/3 cup honey
  • 2 tsp. vanilla extract
  • 1 1/2 cups quick cook oats
  • 1 cup almond flour or almond meal
  • 2 Tbsp. ground flaxseed
  • 1 tsp. kosher salt
  • 1 tsp. ground cinnamon

Chocolate topping

  • 1 cup dark chocolate chips
  • 1/2 cup creamy peanut butter
  • flaky sea salt, optional

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper to prevent sticking and make for easy removal of the bars.
  2. Mix wet ingredients: In a large mixing bowl, combine the mashed bananas, creamy peanut butter, egg, coconut sugar (or cane sugar), honey, and vanilla extract. Whisk thoroughly until all ingredients are well blended and you have a smooth mixture.
  3. Add dry ingredients: Stir in the quick cook oats, almond flour or almond meal, ground flaxseed, ground cinnamon, and kosher salt into the wet mixture. Mix until everything is evenly incorporated.
  4. Bake the bars: Pour the combined batter into the prepared pan and spread it out evenly. Bake in the preheated oven for 20-25 minutes, or until the center is set and the edges turn golden brown.
  5. Prepare chocolate topping: While the bars are baking, place the dark chocolate chips and peanut butter in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
  6. Apply topping: Right after removing the bars from the oven, pour the chocolate and peanut butter mixture over the top and smooth it out into an even layer with a spatula.
  7. Chill and set: Place the pan in the refrigerator and chill for 30 to 60 minutes, until the chocolate topping sets firmly.
