Instructions

  1. Make the Filling: Combine all of the filling ingredients in a small saucepan. Place the saucepan on the stovetop over low heat and melt the ingredients together, stirring frequently until smooth and fully combined.
  2. Chill the Filling: Once melted, remove the saucepan from heat. Transfer the mixture to the refrigerator and chill it for at least 45 minutes, or until firm enough to scoop. If it isn’t firm enough, chill longer as needed.
  3. Scoop and Freeze: After the filling has chilled, use a small cookie scoop to form balls and place them on a lined baking sheet. Freeze the scooped filling for at least 20 minutes to harden.
  4. Prepare the Chocolate Coating: Melt the coffee-flavored dark chocolate and coconut oil together in a small saucepan over low heat, stirring gently until completely smooth and melted.
  5. Dip the Truffles: Remove the chilled filling balls from the freezer. Using a fork or dipping tool, dip each ball into the melted chocolate until fully coated.
  6. Decorate and Set: Place the coated truffles back onto the lined baking sheet. Drizzle with any remaining melted chocolate if desired, and sprinkle with a pinch of flaked sea salt to enhance flavor.
