Chocolate Chip Cookie Brownie Bars

The ultimate dessert mashup—rich, fudgy brownies layered with gooey chocolate chip cookie dough. Each bite is decadently soft in the center and perfectly golden on top.

  • For the Brownie Layer:
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup coconut oil or melted butter
  • 1 cup coconut sugar or brown sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • For the Cookie Layer:
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil or butter, softened
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon plant-based milk or regular milk
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix all brownie layer dry ingredients.
  3. In another bowl, whisk wet ingredients for the brownie layer until smooth, then combine with dry ingredients. Spread evenly in the pan.
  4. In a separate bowl, cream together coconut oil, sugar, vanilla, and milk for the cookie layer.
  5. Stir in dry ingredients for the cookie layer, then fold in chocolate chips.
  6. Drop spoonfuls of cookie dough over brownie batter and gently press down to cover.
  7. Bake for 25–30 minutes, or until the top is golden and the center is just set.
  8. Cool before slicing for clean edges or serve warm for a gooey texture.

Notes

  • Use regular butter and milk for a more traditional version.
  • Can substitute coconut sugar with brown sugar without affecting texture.
  • For extra indulgence, serve with a scoop of vanilla ice cream.
