Ingredients

Scale

Chicken

  • 1.5 pounds (680g) boneless, skinless chicken breasts, cooked and shredded

Vegetables

  • 10 ounces (280g) fresh spinach, roughly chopped
  • 8 ounces (225g) cremini mushrooms, sliced thin
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced

Dairy

  • 1 cup (240ml) heavy cream
  • 1 cup (100g) shredded mozzarella cheese, plus extra for topping
  • 1/2 cup (50g) grated Parmesan cheese

Others

  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Prep Your Ingredients: Shred the cooked chicken, slice the mushrooms thinly, and roughly chop the spinach. Rinse fresh spinach to remove grit. Have all ingredients ready before cooking.
  2. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add the diced onions and minced garlic, sautéing until soft and fragrant, about 3 minutes. Then add sliced mushrooms and chopped spinach, cooking until mushrooms are tender and spinach wilts, stirring frequently to avoid sticking.
  3. Mix It All Together: In a large bowl, combine the shredded chicken and sautéed vegetable mixture. Pour in heavy cream, sprinkle Italian seasoning, and fold in mozzarella and Parmesan cheeses. Stir well until everything is evenly coated. Season with salt and pepper to taste.
  4. Assemble and Bake: Preheat the oven to 375°F (190°C). Transfer the combined mixture into a greased 9×13-inch baking dish, spreading evenly. Top with additional mozzarella cheese. Bake for 25-30 minutes until hot throughout and cheese is bubbly and golden.
  5. Let It Rest: Remove casserole from the oven and let it sit for about 5 minutes to allow flavors to settle and prevent mouth burns. Serve warm and enjoy your comforting low-carb casserole.

Notes

  • Poaching the chicken before shredding keeps it juicy and tender.
  • If using frozen spinach, thaw and squeeze out excess water before cooking to avoid a watery casserole.
  • Use rotisserie chicken as a convenient shortcut.
  • Adjust salt cautiously due to the saltiness of cheeses.
  • Letting the casserole rest improves flavor melding and makes serving easier.
