- 1 large French baguette, halved lengthwise
- 1/2 cup basil pesto
- 1 1/2 cups cooked chicken breast, chopped
- 1 1/2 cups shredded mozzarella cheese
- 1 cup cherry tomatoes, halved (use mixed colors)
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Grated Parmesan, for finishing (optional)
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place baguette halves on the baking sheet, cut side up. Spread pesto evenly over each half.
- Top with shredded mozzarella, then scatter chopped chicken and halved cherry tomatoes.
- Season lightly with salt, black pepper, and red pepper flakes.
- Bake for 10–12 minutes, or until the cheese is melted and bubbly and edges are golden.
- Remove from oven and finish with grated Parmesan if desired. Slice and serve immediately.
