Chicken Pesto French Bread Pizzas

Crispy and flavorful French bread halves topped with basil pesto, melty mozzarella, chicken, and vibrant cherry tomatoes—a delicious, quick pizza-style dish perfect for weeknight dinners or snacks.

  • 1 large French baguette, halved lengthwise
  • 1/2 cup basil pesto
  • 1 1/2 cups cooked chicken breast, chopped
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved (use mixed colors)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Grated Parmesan, for finishing (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place baguette halves on the baking sheet, cut side up. Spread pesto evenly over each half.
  3. Top with shredded mozzarella, then scatter chopped chicken and halved cherry tomatoes.
  4. Season lightly with salt, black pepper, and red pepper flakes.
  5. Bake for 10–12 minutes, or until the cheese is melted and bubbly and edges are golden.
  6. Remove from oven and finish with grated Parmesan if desired. Slice and serve immediately.

  • Use rotisserie chicken for a faster prep option.
  • Swap mozzarella for provolone or fontina for a flavor twist.
