Ingredients

Scale

For the Chicken Koftas

  • 500 grams ground chicken
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil (for brushing grill)

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt

Instructions

  1. Prepare the Kofta Mixture: In a large bowl, combine ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
  2. Shape the Koftas: Using your hands, form the mixture into small oval-shaped koftas, ensuring they are compact to hold together during grilling.
  3. Preheat and Prepare the Grill: Preheat your grill to medium-high heat and brush the grates with olive oil to prevent sticking and enhance flavor.
  4. Grill the Koftas: Place the koftas on the preheated grill and cook for about 10 to 12 minutes, turning occasionally to allow even cooking on all sides, until the chicken is fully cooked through.
  5. Make the Garlic Yogurt Sauce: In a separate bowl, mix the plain yogurt with freshly squeezed lemon juice and a pinch of salt until smooth and well combined.
  6. Serve: Arrange the grilled koftas on a serving platter and serve alongside the garlic yogurt sauce for dipping or drizzling.

Notes

  • You can substitute fresh parsley with fresh cilantro or mint for a different flavor profile.
  • If you don’t have a grill, these koftas can be cooked on a stovetop grill pan or broiled in the oven.
  • For an extra garlicky sauce, add a minced garlic clove into the yogurt mixture.
  • Ensure the koftas are tightly packed to avoid falling apart on the grill.
  • Serve with warm pita bread or a fresh salad for a complete meal.
