Easy to prepare and requiring no baking, it’s an ideal make-ahead treat that sets beautifully in the refrigerator.

Ingredients

Scale

Jello Mixture

  • 1 package cherry Jello (4-serving size)
  • 1/2 cup boiling water
  • 1/2 cup cold water

Mousse Base

  • 1 cup fresh cherries, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 teaspoon vanilla extract
  • 1 cup Cool Whip

Garnish (optional)

  • Cool Whip
  • Maraschino cherries

Instructions

  1. Dissolve Jello: Add the cherry Jello to a small bowl and pour the boiling water over it. Stir until fully dissolved to ensure a smooth base for the mousse.
  2. Blend Ingredients: In a blender, combine the chopped fresh cherries, softened cream cheese, cold water, and vanilla extract. Blend these ingredients to a smooth consistency, creating the creamy base of the mousse.
  3. Add Jello Mixture: Pour the dissolved Jello mixture into the blender and blend again until completely smooth, fully integrating the gelatin with the cream cheese and cherries.
  4. Incorporate Cool Whip: Transfer the blended mixture to a large bowl and gently whisk in the Cool Whip until it is smooth and fully incorporated, giving the mousse its light and airy texture.
  5. Portion Mousse: Spoon the mousse into individual dessert dishes or serving bowls, preparing them for chilling.
  6. Chill: Refrigerate the mousse for about 2 hours or until it is fully set and firm, allowing the gelatin to properly thicken the dessert.
  7. Garnish and Serve: Before serving, garnish the mousse with additional Cool Whip and maraschino cherries for extra flavor and decoration, if desired.

Notes

  • Ensure the cream cheese is softened for easier blending and a smoother mousse texture.
  • Fresh cherries add natural flavor; frozen cherries may be used but drain excess liquid.
  • For a firmer mousse, chill longer than 2 hours if needed.
  • Use a blender for a silky smooth texture; alternatively, a food processor can be used.
  • This dessert is best served chilled but can be stored in the refrigerator for up to 2 days.
