Cheesy Spinach Rice Balls

These crispy baked spinach rice balls are packed with gooey cheese, savory herbs, and wholesome rice. Golden on the outside and soft on the inside, they make the perfect appetizer, party bite, or satisfying vegetarian snack.

  • 2 cups cooked white rice (cooled)
  • 1 cup chopped frozen spinach, thawed and squeezed dry
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon olive oil (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix the rice, spinach, mozzarella, Parmesan, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.
  3. Scoop the mixture and shape into balls, about 1.5 inches in diameter.
  4. Roll each ball in panko breadcrumbs for a crispy coating.
  5. Place on the prepared baking sheet and lightly brush the tops with olive oil.
  6. Bake for 18–20 minutes or until golden and crisp.
  7. Serve warm with marinara sauce or garlic aioli, if desired.

  • Use gluten-free breadcrumbs for a gluten-free version.
  • Great for using leftover rice.
  • Can be frozen before or after baking for easy make-ahead snacks.
