Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined, being careful not to overwork the meat.
  3. Press Meat into Dish: Spread the meat mixture evenly in the bottom of the prepared baking dish. Bake uncovered for 20–25 minutes until the meat is partially cooked.
  4. Prepare Mashed Potatoes: Warm the mashed potatoes and stir in the sour cream and butter. Season with salt and pepper to taste, ensuring they are creamy and smooth.
  5. Layer Mashed Potatoes: Carefully spread the mashed potatoes over the baked meatloaf layer, forming an even layer on top.
  6. Add Cheese and Bake Again: Sprinkle the shredded cheddar cheese evenly over the mashed potatoes. Bake for an additional 10–15 minutes until the cheese is melted and bubbly.
