Cheesy Broccoli Fritters

- 2 cups broccoli florets, finely chopped and lightly steamed
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/3 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
- Lightly steam the chopped broccoli for 2–3 minutes until just tender, then drain and cool.
- In a large mixing bowl, combine the steamed broccoli, mozzarella, Parmesan, flour, egg, garlic powder, onion powder, salt, and pepper. Mix well to form a cohesive batter.
- Heat olive oil in a nonstick skillet over medium heat.
- Scoop out 2 tablespoons of the mixture and shape into small patties or fritters.
- Place them into the hot skillet and cook for 3–4 minutes per side, until golden brown and crispy.
- Transfer to a paper towel–lined plate. Serve warm with your favorite dip or sauce.
Notes
- Make sure broccoli is well-drained to avoid soggy fritters.
- Fritters can be made ahead and reheated in the oven or air fryer.
- Try adding chopped herbs like parsley or chives for extra flavor.
