Cheesy Broccoli Fritters

Crispy on the outside, gooey and cheesy on the inside — these broccoli fritters are a delicious and fun way to enjoy vegetables. Perfect as a snack, appetizer, or lunchbox treat, they’re loaded with melty cheese and golden bites of broccoli goodness.

Ingredients

  • 2 cups broccoli florets, finely chopped and lightly steamed
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Lightly steam the chopped broccoli for 2–3 minutes until just tender, then drain and cool.
  2. In a large mixing bowl, combine the steamed broccoli, mozzarella, Parmesan, flour, egg, garlic powder, onion powder, salt, and pepper. Mix well to form a cohesive batter.
  3. Heat olive oil in a nonstick skillet over medium heat.
  4. Scoop out 2 tablespoons of the mixture and shape into small patties or fritters.
  5. Place them into the hot skillet and cook for 3–4 minutes per side, until golden brown and crispy.
  6. Transfer to a paper towel–lined plate. Serve warm with your favorite dip or sauce.

Notes

  • Make sure broccoli is well-drained to avoid soggy fritters.
  • Fritters can be made ahead and reheated in the oven or air fryer.
  • Try adding chopped herbs like parsley or chives for extra flavor.
