Cheesy Broccoli Fritters

- 2 cups fresh broccoli florets (steamed and finely chopped)
- 2 large eggs
- 1/3 cup all-purpose flour (or almond flour for gluten-free)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onion
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
- Steam broccoli until tender, then chop finely. Let cool slightly.
- In a large bowl, combine chopped broccoli, eggs, flour, cheddar, Parmesan, chives, garlic powder, salt, and pepper. Mix until fully combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Scoop 2 tablespoons of batter and form into patties. Place onto skillet and flatten slightly.
- Cook each side for 3–4 minutes, or until golden and crispy.
- Transfer to a paper towel-lined plate. Serve hot with sour cream or yogurt dip if desired.
Notes
- Use almond flour for a gluten-free version.
- Add a pinch of chili flakes for a spicy twist.
