Cheesy Broccoli Fritters

Golden and crispy on the outside, soft and cheesy on the inside—these broccoli fritters are loaded with flavor, melty cheese, and a perfect way to sneak in greens for any meal or snack.

  • 2 cups fresh broccoli florets (steamed and finely chopped)
  • 2 large eggs
  • 1/3 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped chives or green onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Steam broccoli until tender, then chop finely. Let cool slightly.
  2. In a large bowl, combine chopped broccoli, eggs, flour, cheddar, Parmesan, chives, garlic powder, salt, and pepper. Mix until fully combined.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Scoop 2 tablespoons of batter and form into patties. Place onto skillet and flatten slightly.
  5. Cook each side for 3–4 minutes, or until golden and crispy.
  6. Transfer to a paper towel-lined plate. Serve hot with sour cream or yogurt dip if desired.

Notes

  • Use almond flour for a gluten-free version.
  • Add a pinch of chili flakes for a spicy twist.
  • Perfect as a side dish, snack, or even breakfast with eggs.
