Scale

Vegetables

  • 4 cups cauliflower (riced, see notes)
  • 2 cups broccoli (riced)

Cooking & Seasoning

  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons butter
  • 1/2 cup heavy whipping cream
  • 1 teaspoon mustard powder
  • 8 ounces sharp cheddar cheese

Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium-high heat to prepare for cooking the riced vegetables.
  2. Cook the vegetables: Add the riced cauliflower and broccoli to the skillet, seasoning with salt and pepper. Stir often and cook until just tender, about 8-9 minutes.
  3. Prepare cheese sauce base: Transfer the cooked vegetable rice to a bowl, then wipe the pan clean and return it to medium heat.
  4. Make the sauce: Add butter to the pan and melt it. Whisk in the heavy whipping cream and mustard powder until the mixture is well blended. Cook for another 1-2 minutes until hot and bubbly.
  5. Add cheese: Whisk in the sharp cheddar cheese continually until it is fully melted and the sauce is smooth.
  6. Combine everything: Stir the cauliflower and broccoli rice back into the cheese sauce, coating the vegetables evenly.
  7. Heat through: Continue to cook for 2-3 more minutes until everything is well combined and heated through. Serve warm.

Notes

  • To rice cauliflower and broccoli, pulse florets in a food processor until they resemble rice grains.
  • For a dairy-free version, substitute butter, cream, and cheese with vegan alternatives.
  • This dish can be made ahead and reheated gently on the stovetop.
