Cheesy Brioche Breakfast Buns with Bacon & Egg

- 6 brioche buns (or small bread rolls, tops scooped out)
- 6 slices of thick-cut bacon
- 6 large eggs
- 3/4 cup shredded mozzarella or Gruyère cheese
- 2 tbsp grated Parmesan cheese
- Salt and pepper to taste
- 1 tbsp chopped chives or parsley (optional garnish)
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Carefully hollow out the tops of the brioche buns to create space for the filling.
- In a skillet, cook bacon for 2–3 minutes until slightly crisp but still flexible. Drain on paper towels.
- Place each bacon slice inside the bun, shaping it into a ring to hold the egg.
- Sprinkle shredded mozzarella inside each bun, then gently crack an egg into the center of each.
- Top with a little more cheese and a sprinkle of Parmesan. Season with salt and pepper.
- Bake for 15–18 minutes, or until egg whites are set and yolks are just soft.
- Garnish with chopped herbs if desired. Serve warm.
Notes
- If you prefer your egg yolk cooked more, bake for an additional 2-3 minutes.
- Use Gruyère for a nuttier flavor or mozzarella for a milder, meltier cheese.
- Feel free to add some sautéed vegetables like spinach or mushrooms for extra flavor.
