Cheesy Brioche Breakfast Buns with Bacon & Egg

Golden, fluffy brioche buns baked with a nest of crisp bacon and a sunny egg center, finished with melty cheese on top—perfectly savory and satisfying for a brunch spread or cozy weekend breakfast.

  • 6 brioche buns (or small bread rolls, tops scooped out)
  • 6 slices of thick-cut bacon
  • 6 large eggs
  • 3/4 cup shredded mozzarella or Gruyère cheese
  • 2 tbsp grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp chopped chives or parsley (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Carefully hollow out the tops of the brioche buns to create space for the filling.
  3. In a skillet, cook bacon for 2–3 minutes until slightly crisp but still flexible. Drain on paper towels.
  4. Place each bacon slice inside the bun, shaping it into a ring to hold the egg.
  5. Sprinkle shredded mozzarella inside each bun, then gently crack an egg into the center of each.
  6. Top with a little more cheese and a sprinkle of Parmesan. Season with salt and pepper.
  7. Bake for 15–18 minutes, or until egg whites are set and yolks are just soft.
  8. Garnish with chopped herbs if desired. Serve warm.

Notes

  • If you prefer your egg yolk cooked more, bake for an additional 2-3 minutes.
  • Use Gruyère for a nuttier flavor or mozzarella for a milder, meltier cheese.
  • Feel free to add some sautéed vegetables like spinach or mushrooms for extra flavor.
