Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare an 8×10 inch casserole dish by spraying it lightly with cooking spray to prevent sticking.
  2. Slice the Cauliflower: Cut the cauliflower into thin, even slices to ensure they cook uniformly. This will create approximately two layers in your baking dish.
  3. Layer the First Half of Cauliflower: Place the first half of the cauliflower slices evenly in the bottom of the prepared baking dish forming the first layer.
  4. Add Cheese and Green Onions: Sprinkle half of the shredded Swiss Gruyere cheese evenly over the cauliflower layer, then scatter all the sliced green onions on top. Season with salt and black pepper according to your taste.
  5. Layer the Remaining Cauliflower: Arrange the remaining cauliflower slices evenly on top of the cheese and onions to form a second layer.
  6. Pour Cream and Top Cheese: Pour 1 1/2 cups of heavy cream evenly over the assembled cauliflower layers. Then sprinkle the remaining cheese over the top layer.
  7. Cover and Bake: Cover the baking dish tightly with aluminum foil to retain moisture. Bake in the preheated oven for 30 minutes to allow flavors to meld and start softening the cauliflower.
  8. Finish Baking Uncovered: Remove the foil and continue baking for an additional 40 minutes or until the cauliflower is fork-tender and the cheese is bubbling and golden brown. Check periodically as baking times may vary based on oven.
  9. Rest and Serve: Let the cauliflower au gratin sit for 5 minutes after baking to thicken and set. Serve warm. Store any leftovers in an airtight container in the refrigerator.
