Ingredients

Scale

For the Chicken:

  • 6 boneless chicken thighs (about pounds)
  • 2 tablespoons olive oil

Seasonings:

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste

For the Creamy Sauce:

  • 1 tablespoon butter
  • 1 small shallot, finely minced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 2 sprigs fresh thyme
  • ¼ teaspoon crushed red pepper flakes
  • ⅓ cup heavy cream
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry thoroughly with paper towels to help achieve a crispy sear when cooking.
  2. Season the Chicken: In a small bowl, mix together garlic powder, onion powder, paprika, kosher salt, and freshly ground black pepper. Rub this seasoning blend evenly all over the chicken thighs.
  3. Sear the Chicken: Heat the olive oil in a cast iron skillet over medium heat. Place the chicken thighs skin-side down and cook for about 5 minutes until they develop a golden crust. Flip the thighs and cook for an additional 8 to 10 minutes until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked through.
  4. Make the Sauce: Remove the cooked chicken thighs from the skillet and set aside. In the same skillet, add butter and melt over medium heat. Add the minced shallot and garlic and sauté for about 1 minute until fragrant and softened.
  5. Simmer the Sauce: Stir in the chicken broth, fresh lemon juice, fresh thyme sprigs, and crushed red pepper flakes. Lower the heat to a simmer.
  6. Add Cream and Thicken: Pour in the heavy cream and continue simmering the sauce for about 5 minutes until it thickens slightly and the flavors meld together.
  7. Finish and Serve: Return the chicken thighs to the skillet and spoon the creamy sauce over them. Garnish with chopped fresh parsley and serve immediately while hot.

Notes

  • Ensure the chicken is dried thoroughly before cooking for the best browning and crispiness.
  • This creamy garlic sauce pairs excellently with mashed potatoes, rice, or crusty bread to soak up the flavors.
  • You can substitute bone-in chicken thighs if preferred; just increase the cooking time to ensure they are fully cooked through.
