Blueberry Sauce
- 1 cup Blueberries
- 1/4 cup Water
- 1 tbsp Cornstarch
- 1/4 cup Sugar
- 1 tbsp Lemon Juice
Overnight Oats Base
- 2 cups Old Fashioned Rolled Oats
- 1 1/2 cups Vanilla Yogurt
- 2 cups Almond or Soy Milk
- 4 tsp Cinnamon
- Mix Oats and Dairy: In a large bowl, combine the rolled oats, vanilla yogurt, almond or soy milk, and cinnamon. Stir well until all ingredients are fully incorporated. Divide the mixture equally into 5 separate containers for individual servings.
- Prepare Blueberry Sauce: In a saucepan, add blueberries, water, cornstarch, and sugar. Stir the ingredients together to combine evenly before heating.
- Cook Sauce: Place the saucepan over medium heat and stir continuously until the blueberry mixture begins to thicken and form a sauce. Once thickening starts, reduce the heat to low and keep stirring frequently for 1–2 minutes until a smooth, thick sauce is achieved.
- Finish Sauce: Remove the saucepan from heat and stir in the lemon juice to add brightness and balance the sweetness of the sauce.
- Assemble and Store: Allow the blueberry sauce to cool slightly before equally distributing it over the oats in each container. Seal the containers with lids and refrigerate overnight or for at least 6 hours to allow the oats to soften and flavors to meld.
