- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/4 cup sugar
- 2 teaspoons cornstarch
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
- 2 tablespoons dark chocolate chips, melted (optional)
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy.
- Add flour and salt, and mix until a crumbly dough forms.
- Press the dough evenly into the bottom of the prepared baking dish.
- Bake the crust for 18–20 minutes until lightly golden.
- While the crust bakes, combine blueberries, lemon zest, lemon juice, sugar, and cornstarch in a bowl.
- Once the crust is baked, pour the blueberry mixture evenly over the warm crust.
- Return to the oven and bake for 20–25 minutes, or until the blueberry filling is bubbly and the edges are golden brown.
- Let the bars cool completely in the pan.
- Mix powdered sugar, vanilla extract, and 1–2 tablespoons of milk to form a smooth vanilla drizzle.
- Drizzle the vanilla glaze over the cooled bars.
- If using, melt dark chocolate chips and drizzle over the top for an added touch.
- Cut into bars and garnish with fresh blueberries if desired.

- Use parchment paper for easy removal and clean edges when slicing.
- Frozen blueberries can be used, but thaw and drain them first.
- Chill the bars in the fridge for easier cutting and a firmer texture.
