Ingredients

Scale

For the Cookie Dough:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cheesecake Filling:

  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

For the Blueberry Swirl:

  • 1/2 cup blueberry jam (store-bought or homemade)

Instructions

  1. Prepare the Dough: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. In a large bowl, beat the softened butter, granulated sugar, and light brown sugar until the mixture becomes light and fluffy, about 2 to 3 minutes. Add the egg and vanilla extract, mixing until fully combined. Gradually incorporate the dry flour mixture into the wet ingredients, stirring until just blended. Cover the dough and refrigerate it for 30 minutes to firm up.
  2. Make the Cheesecake Filling: In a small bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Set aside the cheesecake filling.
  3. Assemble the Cookies: Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper. Scoop about 1 tablespoon of the chilled cookie dough and slightly flatten it in your hand. Place a small dollop (about 1/2 teaspoon) of cheesecake filling in the center, then add a small swirl of blueberry jam over the filling. Top with another small piece of dough and carefully seal the edges to form a ball, encasing the filling and jam inside.
  4. Bake: Place the prepared cookie balls onto the lined baking sheet with a spacing of approximately 2 inches between each cookie. Bake in the preheated oven for 12 to 14 minutes or until the edges turn lightly golden. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Homemade Jam: For a fresh twist, prepare your own blueberry jam by simmering fresh blueberries with sugar and a touch of lemon juice until thickened.
  • Chill the Dough: Refrigerating the dough is key to preventing excessive spreading during baking, resulting in perfectly shaped cookies.
  • Storage: Store the cookies in an airtight container in the refrigerator for up to 5 days. They can be enjoyed chilled or at room temperature.
