Instructions

  1. Season and cook the chicken: Season the chicken breasts generously with salt, pepper, and garlic powder. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for about 6-7 minutes per side or until golden brown and cooked through. Remove from skillet and let cool slightly, then slice into strips.
  2. Sauté the mushrooms and aromatics: In the same skillet, add another tablespoon of olive oil if needed. Sauté the sliced mushrooms, minced garlic, and thinly sliced onion over medium heat for about 5 minutes, until the mushrooms release their moisture and are tender.
  3. Prepare the sauce: While the mushrooms cook, whisk together soy sauce, oyster sauce (if using), sesame oil, rice vinegar, honey or sugar, freshly ground black pepper, and chicken broth in a small bowl. If you prefer a thicker sauce, mix the cornstarch with 1 tablespoon of water to create a slurry and add it to the sauce mixture.
  4. Combine sauce with mushrooms: Pour the sauce over the sautéed mushrooms and stir well. Bring to a gentle simmer and cook for 2-3 minutes until the sauce thickens slightly.
