Ingredients

Scale

Main Ingredients

  • 1 lbs. lean ground beef (96/4)
  • 1 lbs. russet potatoes (chopped)
  • 1/2 white onion (chopped)
  • 1 tsp. olive oil
  • 1 cup shredded cheddar cheese (112g)
  • handful shredded iceberg lettuce
  • 1 vine tomato (chopped)
  • handful white onions (chopped)
  • 1/4 cup dill pickle chips

Seasonings and Add-ins

  • 1/4 cup water
  • 2 tsp. yellow mustard
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 cup mayonnaise (55g)
  • 1/4 cup ketchup (65g)
  • 1/4 cup dill pickles (chopped)
  • 1 tbsp. dill pickle juice
  • Salt and pepper, to taste

Instructions

  1. Preheat and Prepare Potatoes:

Preheat your oven to 375 degrees Fahrenheit. Wash and chop the russet potatoes into small bite-sized pieces, leaving the skin on for added texture and nutrients. The smaller the pieces, the faster they will cook.

  2. Cook Potatoes:

Heat a pan over medium heat on the stove and add the olive oil. Add the chopped potatoes and 1/4 cup water to the pan. Season generously with salt and pepper. Cook, stirring often to prevent burning, until the potatoes begin to soften. This usually takes 5 to 10 minutes depending on the size of the chunks. Transfer the softened potatoes to a baking dish.

  3. Cook Ground Beef and Onions:

In the same pan, add the ground beef and chopped white onion. Cook until the beef is mostly browned and the onions have softened. Season with salt, pepper, garlic powder, onion powder, and yellow mustard. Stir well to combine. Once cooked, add the beef mixture to the baking dish with the potatoes and mix together thoroughly.

  4. Add Cheese and Bake:

Sprinkle the shredded cheddar cheese evenly over the potato and beef mixture. Cover the baking dish with foil and place it in the oven. Bake for 15 minutes or until the cheese is fully melted and bubbly.

  5. Make Big Mac Sauce:

While the casserole is baking, prepare the Big Mac sauce by combining mayonnaise, ketchup, chopped dill pickles, and dill pickle juice in a small bowl. Stir until smooth and refrigerate until ready to use.

  6. Assemble and Serve:

Once the casserole finishes baking, remove the foil. Drizzle the Big Mac sauce generously over the top. Add shredded iceberg lettuce, chopped white onions, chopped tomatoes, and dill pickle chips as toppings. Serve immediately and enjoy the comforting flavors of this Big Mac inspired casserole.

Notes

  • For crispier potatoes, you can roast them separately before mixing with the beef mixture.
  • If you prefer, use reduced-fat cheese and mayonnaise to lower calories.
  • Leftovers store well covered in the refrigerator for up to 3 days. Reheat covered in the oven or microwave.
  • You can substitute ground turkey or chicken for a leaner protein option.
  • Add a dash of smoked paprika to the beef mixture for a smoky flavor twist.
