Berry Oat Bars are a delicious and simple morning treat, combining a buttery oat base with sweet raspberry preserves. These bars are easy to make, perfect for breakfast or a snack, and can be adapted with gluten-free flour substitutes.

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and spray an 8×8-inch baking pan with non-stick spray. Set the pan aside ready for the batter.
  2. Mix Dry and Wet Ingredients: In a large bowl, combine the all-purpose flour (or gluten free substitute), quick oats, baking powder, salt, and coconut sugar. Add melted coconut oil and maple syrup, then mix everything thoroughly until evenly combined, except for the raspberry preserves.
  3. Press Base Layer: Using your hands, press about two-thirds of the oat mixture firmly and evenly into the bottom of the prepared baking pan, creating a flat and even base layer.
  4. Add Raspberry Preserves: Gently spread the raspberry preserves over the base layer, leaving a ½ inch border around the edges to prevent the preserves from scalding during baking.
  5. Add Crumble Topping: Crumble the remaining one-third of the oat mixture evenly over the preserves. Lightly press down to help the topping stay in place after baking.
  6. Bake: Place the pan on the center rack and bake for 25 to 30 minutes, or until the top is lightly browned.
  7. Cool and Serve: Allow the bars to cool completely in the pan set on a cooling rack. Once cooled, cut into 9 squares and serve.
