Berry Cream Cheese Breakfast Bagels

  • 1 cup spinach leaves, packed
  • 1/2 cup milk (dairy or plant-based)
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp melted butter or coconut oil
  • 1/2 cup dark chocolate chips
  • 1 tsp coconut oil
  • 1/4 cup chopped nuts (walnuts, almonds, or hazelnuts)

Instructions

  1. In a blender, combine spinach, milk, egg, and vanilla. Blend until smooth and vibrant green.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Add the blended mixture and melted butter. Stir until just combined.
  3. Preheat and grease a waffle iron. Pour in batter and cook according to waffle iron instructions until golden and crisp.
  4. Meanwhile, melt dark chocolate chips and coconut oil in a microwave or double boiler until smooth.
  5. Dip each waffle corner or edge into melted chocolate and sprinkle with chopped nuts.
  6. Let set on a wire rack or parchment paper. Serve warm or at room temperature.

Notes

  • Use gluten-free flour if desired for a gluten-free version.
