Beet, Pear & Blue Cheese Stacks with Pecans

Elegant and colorful appetizer featuring roasted beet slices layered with sweet pear, tangy blue cheese, and crunchy pecans, finished with a touch of honey and fresh thyme for a festive presentation.

Ingredients

  • 3 medium beets, roasted and peeled
  • 2 ripe pears, peeled and thinly sliced
  • 4 oz blue cheese, crumbled
  • 1/2 cup pecans, toasted
  • 1 tablespoon honey (optional)
  • Fresh thyme sprigs, for garnish
  • Pinch of salt and pepper

Instructions

  1. Slice roasted beets into even 1/4-inch rounds. Pat dry with a paper towel.
  2. Arrange one beet slice on a plate, top with a layer of pear, then sprinkle with blue cheese.
  3. Repeat layers to create small stacks, finishing with blue cheese on top.
  4. Sprinkle toasted pecans over each stack.
  5. Drizzle lightly with honey if desired.
  6. Garnish with fresh thyme, and season with a pinch of salt and pepper. Serve immediately.

Notes

  • Use a mandoline for perfectly even beet and pear slices.
  • For a milder flavor, substitute goat cheese for blue cheese.
  • Can be served chilled or at room temperature.
